They do make paint and varnish strippers that are environmentally friendly. I just used one that stated it would take off 5 layers but I threw away the container so I can't tell you the brand. I took the varnish [finish] off a TV stand and then sanded the stain out of it and re-stained and put urethane on it. Worked very well. I just let the stripper sit there for 45 minutes and used a putty knife to take it and the varnish off. Let the wood 'dry' for about an hour then sanded.
